Buro Miso
Buro Miso is a diplomatic outpost aiming to stimulate the relationship between humans and beans, and in particular our relationship with the Japanese fermented bean paste miso. Buro Miso investigates, together with the public, what role fermented bean paste can play in some of our challenging transitions: from animal to plant-based the protein sources, towards environmental justice for all living things, and perhaps even the transition to a human species who feels comfortable with being part of living systems rather than obsessing over controlling them.
But practically Buro Miso is a mobile kitchen/exhibition where we make and fantasize about miso, enter into public dialogue, show miso-related content and share our enthousiasm about beans, cooking with microbes and time, and replacing destructive food systems with thriving ones. Buromiso.nl is a network of people that have a professional interest in positive cultural change, not just in food but in many other urgent themes like energy, governance, ecology, education and so on. We are the miso.
